List of Major Spices of India: Dried seeds, fruits, roots, barks, or vegetables added to food for the purpose of flavoring, coloring or preserving it are called 'spices'. Sometimes spices are also used to hide other flavors. Spices are different from herbs. Different parts of leafy green plants are called herbs. They are also used for flavoring or garnishing. Many spices have the ability to destroy microorganisms. Spices are an integral part of the kitchen.
We use many types of spices in the kitchen. Turmeric, coriander, cumin, fenugreek, celery and asafoetida etc. are included in daily food. Spices are a small and integral part of the cooking process.
India's position in world spice production: India is known as the home of spices. The Indian Institute of Spices Research is an autonomous research institute of India engaged in research related to spices. Its headquarter is located in Kozhikode (Kerala). Various types of spices are produced here, such as black pepper, cardamom (small and large), ginger, garlic, turmeric, red chili etc. India is the largest producer, consumer and exporter of spices and spice products. Of the 109 spices listed by ISO, India produces 75 due to its diverse agro-climatic regions.
Almost all the states and union territories of the country grow one or the other spice. In the world spice trade, India accounts for 48 per cent of global exports and 44 per cent in export value.
